Meaty Biscuits Recipe

Ok, so the name of this recipe sounds weird, but I can assure you, these are simply delicious. As I was letting the recipe cool on the counter, my husband came over to try one and his review, was quite simply, “holy *^$%, these are addictive, put them in the freezer now.”

As you  may be able to tell, I like to give some options with my recipes. You can make them in the way listed below to go with a bowl of soup or a salad for lunch or dinner. Alternatively, you can use mini muffin trays and “mini biscuits” which Pillsbury came out recently.

With a holiday weekend ahead, I figured people may need some party recipes – the mini version is perfect for appetizers!

Meaty Biscuits

1 lb ground sirloin or ground beef
1/3 c. finely chopped red onion (or regular, whatever you want really!)
1/3 c bbq sauce
½ c. frozen corn, thawed
1 10 count can flaky biscuits
½ c shredded, reduced fat sharp cheddar cheese

1)    Preheat oven to 400

2)    In a medium non-stick skillet cook the sirloin and red onion over the medium heat, about 5 minutes until the meat is done. Drain excess grease.

3)  Remove from heat and add the bbq sauce and corn, mixing well

4)    Divide each biscuit in half and press each half into non-stick muffin tins coated with non-stick cooking spray. Diving the meat evenly into the prepared muffin tins. Bake for 10 minutes

5)    To freeze: cool to room temp, freeze on a baking sheet, and then transfer to zip-top freezer bag; to reheat: preheat oven to 350, defrost cups or place them frozen on nonstick sheet; bake for 10-15 minutes, sprinkle cheese on top, and then return to oven for 2-3 min.

These were a huge hit in my home and we took them to a scout pot luck and they disappeared fast – none left for the freezer!
